Broken Spagetti and Pancetta soup.
I made this soup during the week and Kevin loved it and I loved it as it was so easy to make I hope you will try it and enjoy it as well.
All you need is to
Put some minced or fresh garlic into the saucepan you are going to make the soup into and a little oil and cook this for a little while.
Chop a onion up and fry this.
Slice up a packet of pancetta into strips and fry with the onion and garlic.
1 large zucchini
1 large carrot
Add to the saucepan and cook till soft.
Pour 1 cup of water and 1 litre of chicken soup into saucepan.
Add 2 cans of diced Italian tomatoes .
Break up your spaghetti (I used Angel hair) into 5 cms lengths around 100 grams and add .
Bring to boil then simmer for 15 Min's.
Kevin put Parmesan cheese on his.
And there you go a nice fast and easy soup to make for a chilly night. Another good thing about this soup is most of the ingredients will be in the fridge anyway and truly from start to finish it took me around forty minutes to make...
